It's not a requirement to be. And I think it's an important decision to make for yourself if you do and who with. The only Persona I know of who regularly changes knights is Firebird.

You still need to trust one another for reasons beyond just that as well, however. This is a being you are tying yourself too, after all.

Certainly, but they must be willing to accept you as well. If you intend to pair yourself, you would need to befriend them first.
Although to be honest you would likely worry a great many people in the process.
